The bakery is located behind Asama Onsen Shoten. Matsumoto is known for soy sauce brewing and also famous for growing wheat. Oyaki dumplings, a local specialty, are also made from wheat flour. Alps Bakery uses 100% Shinshu flour, a rarity since not much flour is still milled in the Shinshu region these days.
During hard cider brewing season, Alps Bakery bakes its bread with apple yeast. The bakery’s signature item are its croissants, which we also serve for breakfast. The bread served with dinner at Alps Table and 367 is also baked at Alps Bakery.
